Cotton Candy Dream Cheesecake

Ingredients

For the Buttery Graham Cracker Crust:
1½ cups graham cracker crumbs
¼ cup granulated sugar
½ cup unsalted butter, melted
For the Creamy Cotton Candy Filling:
4 (8-ounce) blocks full-fat cream cheese
1 cup granulated sugar
1 cup full-fat sour cream, at room temperature
¼ cup all-purpose flour
4 large eggs, at room temperature
1 teaspoon pure vanilla extract
½ cup cotton candy, torn into small pieces
For the Whipped Cream Topping:
½ cup heavy whipping cream, very cold
2 tablespoons powdered sugar

Instructions

Step 1: Prepare the Oven and the Crust
Position an oven rack in the center of the oven and preheat to 325°F. In a medium bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and stir with a fork until the mixture is evenly moistened and resembles wet sand. Press the crumb mixture firmly into the bottom and about 1 inch up the sides of a 9-inch springform pan, using the flat bottom of a measuring cup to create a compact, even layer. Bake the crust for 10 minutes, then remove it from the oven and set it aside on a wire rack to cool completely while you prepare the filling.

Step 2: Make the Cheesecake Filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until it is completely smooth, creamy, and free of lumps, about 2-3 minutes. Scrape down the sides and bottom of the bowl as needed. Gradually add the granulated sugar and continue beating until the mixture is light and fluffy. Add the sour cream and flour, mixing on low speed until just combined and smooth. Add the eggs one at a time, mixing on low speed after each addition just until the yolk is incorporated. Over-mixing after adding the eggs can cause the cheesecake to crack. Finally, gently fold in the vanilla extract and the torn cotton candy pieces with a rubber spatula until they are evenly distributed. The cotton candy will begin to dissolve and create a sweet, colorful swirl.

Step 3: Bake the Cheesecake
Pour the finished filling over the cooled crust. Smooth the top with a spatula. Place the springform pan on a large piece of heavy-duty aluminum foil and wrap the foil securely around the bottom and up the sides of the pan to prevent water from seeping in. Place the wrapped pan in a large, deep roasting pan. Pour hot water into the roasting pan until it reaches about 1 inch up the sides of the springform pan. This water bath helps the cheesecake bake evenly and prevents cracks. Carefully transfer the roasting pan to the center oven rack. Bake for 60 to 70 minutes. The cheesecake is done when the edges are set and the center 2 to 3 inches still has a slight, gentle jiggle when the pan is shaken.

Step 4: Cool the Cheesecake Slowly
Turn off the oven and open the oven door about 4 to 6 inches. Allow the cheesecake to cool gradually in the oven for 1 hour. This slow cooling process is crucial to prevent the surface from cracking. After 1 hour, remove the cheesecake from the water bath and place it on a wire rack to cool completely to room temperature. Once cool, cover the pan with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until fully chilled and set.

Step 5: Make the Whipped Cream Topping
Just before serving, make the topping. In a chilled mixing bowl, beat the cold heavy cream and powdered sugar with an electric mixer on medium-high speed until stiff, fluffy peaks form. Be careful not to overbeat, which can turn the cream into butter.

Step 6: Decorate and Serve
Carefully remove the sides of the springform pan from the chilled cheesecake. Transfer the cheesecake to a serving plate. Spread or pipe the whipped cream over the top. For a magical, playful presentation, garnish generously with additional pieces of fresh cotton candy just before serving. Enjoy immediately.
