No-Bake Peanut Butter Cheesecake Bites

Ingredients

For the Peanut Butter Cheesecake Filling:
1 cup full-fat cream cheese, softened to room temperature
½ cup creamy peanut butter
1 cup powdered sugar, sifted
½ teaspoon pure vanilla extract
½ teaspoon salt
1½ cups graham cracker crumbs
For the Optional Chocolate Coating:
1 cup milk chocolate chips
1 tablespoon coconut oil or vegetable oil
For Rolling and Decoration (Optional):
Extra graham cracker crumbs
Crushed peanuts
Chocolate sprinkles
Crushed pretzels

Instructions

Step 1: Cream the Base
In a large mixing bowl, beat the softened cream cheese and peanut butter together with an electric hand mixer on medium speed until the mixture is completely smooth, creamy, and well-blended. Ensure there are no lumps.

Step 2: Sweeten and Flavor
Add the sifted powdered sugar, vanilla extract, and salt to the bowl. Continue beating on low to medium speed until all the ingredients are fully incorporated and the filling is smooth and uniform in color, scraping down the sides of the bowl as needed.

Step 3: Add Texture
Stir in the graham cracker crumbs by hand using a rubber spatula until they are evenly distributed throughout the filling. The mixture will become thicker and have a consistency similar to a soft dough.

Step 4: Chill the Filling
Cover the bowl with plastic wrap and refrigerate the mixture for about 1 hour, or until it is firm enough to handle and roll into balls.

Step 5: Shape the Bites
Once chilled, use a small cookie scoop or a teaspoon to portion out the filling. Roll each portion between your palms to create smooth, uniform balls, about 1 inch in diameter. Place the formed balls on a baking sheet lined with parchment paper.

Step 6: Prepare the Chocolate Coating (Optional)
If you wish to coat the bites, place the milk chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth.

Step 7: Dip and Decorate
Using a fork or a dipping tool, carefully dip each chilled cheesecake ball into the melted chocolate, turning to coat it completely. Allow any excess chocolate to drip back into the bowl. While the chocolate is still wet, you can roll the coated bite in your choice of extra graham cracker crumbs, crushed peanuts, chocolate sprinkles, or crushed pretzels for added texture and flavor. Place the finished bites back on the parchment-lined baking sheet.

Step 8: Set and Serve
Refrigerate the coated (or uncoated) cheesecake balls for at least 30 minutes to allow the chocolate to set and the bites to firm up completely. Serve chilled and enjoy. Store any leftovers in an airtight container in the refrigerator for up to one week.
