Strawberry Cheesecake Crunch Bites Recipe
Ingredients

8 ounces full-fat cream cheese, softened to room temperature
¼ cup powdered sugar, sifted
1 teaspoon pure vanilla extract
¼ cup strawberry puree
For the Crunchy Strawberry Coating:
1 cup graham cracker crumbs
¼ cup granulated sugar
¼ cup unsalted butter, melted
½ cup freeze-dried strawberries, crushed into a powder

1 cup strawberry glaze
Instructions
Step 1: Prepare the Cheesecake Filling
In a medium mixing bowl, beat the softened cream cheese with an electric hand mixer on medium speed until it is completely smooth and free of lumps. Add the sifted powdered sugar, vanilla extract, and strawberry puree. Continue beating until the mixture is well combined, smooth, and uniformly pink. Scrape down the sides of the bowl as needed.
Step 2: Chill the Filling
Cover the bowl with plastic wrap and refrigerate the cheesecake filling for about 30 minutes. Chilling firms up the mixture, making it much easier to roll into balls.
