Gooey Amish Pineapple Dump Cake
A classic potluck favorite — sweet crushed pineapple baked under a buttery, golden cake topping. Just layer, don’t stir, and let the oven do the work.
INGREDIENTS
• 20 ounces crushed pineapple, undrained
• 1 yellow cake mix (box)
• 1 cups unsalted butter, thinly sliced
• 1 cups chopped pecans or walnuts
• 1 teaspoons ground cinnamon
• 0.3 cups granulated sugar (optional, for extra gooeyness)
STEPS
1. Prep the pan: Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
2. Add the pineapple: Pour the 20 ounces crushed pineapple, undrained (with its juice) evenly into the bottom of the prepared baking dish, spreading it into an even layer.
3. Sprinkle sugar and cinnamon: Sprinkle 0.3 cups granulated sugar (optional, for extra gooeyness) and 1 teaspoons ground cinnamon evenly over the pineapple layer for extra sweetness and warmth.
4. Add the cake mix: Sprinkle the dry 1 yellow cake mix (box) evenly over the pineapple layer. Do not stir — the dry mix should sit right on top, covering the fruit as fully as possible.
5. Top with butter: Layer the 1 cups unsalted butter, thinly sliced evenly over the top of the dry cake mix, covering as much surface as you can. This is what forms the gooey, golden crust as it bakes.
6. Add the nuts: Scatter the 1 cups chopped pecans or walnuts evenly over the top.
7. Bake: Bake uncovered until the top is golden brown and bubbling around the edges.
8. Cool and serve: Let the cake cool for about 15-20 minutes before serving so the gooey pineapple layer can set slightly. Serve warm, ideally with a scoop of vanilla ice cream or whipped cream.
NOTES
The « dump cake » method (layering without mixing) is what creates the gooey texture — resist the urge to stir. For an even gooier result, swap half the butter for a drizzle of sweetened condensed milk over the cake mix before adding the butter. Store leftovers covered in the fridge for up to 4 days; reheat individual portions in the microwave for that fresh-baked gooeyness.
