Instructions

Step 1 — Make the Marinade & Marinate the Chicken

In a small bowl, whisk together the honey, lime juice, lime zest, olive oil, minced garlic, cumin, smoked paprika, salt, and black pepper until fully combined. The marinade should be smooth and coat the back of a spoon.

Set aside half of the marinade in a separate small bowl — this will be your drizzle sauce for serving. Do not skip this step; it is what gives the finished dish that bold, glossy flavor all the way through.

  • No ring mold? No problem. Use a small ramekin, a large cookie cutter, or a clean tin can with both ends removed. Or embrace the rustic look — layer everything in a bowl or deep plate and call it a deconstructed stack. It is just as delicious.
  • Avocado browning. Toss the avocado with lime juice immediately after cutting and assemble the stacks right before serving for the freshest color and flavor.

Variations
