Oreo Cheesecake Stuffed Donut Burger
Ingredients
For the Cheesecake Filling:
8 ounces full-fat cream cheese
¼ cup powdered sugar
1 teaspoon pure vanilla extract
1 cup whipped cream or thawed frozen whipped topping
½ cup Oreo cookies, crushed into fine crumbs
For Assembly and Topping:
4 fresh, medium-sized glazed donuts
½ cup white chocolate chips or chopped white chocolate, melted until smooth
4 whole Oreo cookies, for garnish
Instructions
1. Prepare the Donut « Buns »:
Place each glazed donut on a clean cutting board. Using a serrated knife (a bread knife works best for a clean cut without tearing the soft dough), carefully slice each donut in half horizontally, creating a top « bun » and a bottom « bun. » Apply gentle, even pressure and use a sawing motion to avoid compressing the donut. Set all the donut halves aside on a plate or tray, with the cut sides facing up, ready for assembly.
2. Soften and Beat the Cream Cheese:
Ensure your cream cheese is fully softened to room temperature. If you forgot to take it out of the refrigerator, you can speed up the process by cutting it into small cubes and letting it sit for 15-20 minutes. In a medium mixing bowl, place the softened cream cheese. Using an electric hand mixer on medium speed, beat the cream cheese for about 2 to 3 minutes, scraping down the sides of the bowl with a rubber spatula halfway through. Continue beating until it is completely smooth, creamy, and free of any lumps.
3. Add Sugar and Vanilla:
Add the powdered sugar and vanilla extract to the bowl with the cream cheese. Beat on medium speed for another 1 to 2 minutes, or until the mixture is well-combined, light, and uniformly creamy. Stop and scrape down the sides and bottom of the bowl again to ensure everything is incorporated.
4. Fold in the Whipped Cream Gently:
Add the whipped cream or thawed whipped topping to the cream cheese mixture. Using a rubber spatula, gently fold the whipped cream into the cream cheese base. Use a broad, sweeping motion: cut down through the center of the mixture, scrape along the bottom of the bowl, and fold it up and over the top. Rotate the bowl a quarter turn and repeat. Continue this gentle folding process until the mixture is just combined and has a light, airy, and fluffy texture. Be very careful not to overmix or stir vigorously, as this will deflate the whipped cream and make the filling dense and runny.
5. Fold in the Oreo Crumbs:
Add the crushed Oreo cookie crumbs to the filling. Gently fold them in using the same gentle, sweeping motion, just until the crumbs are evenly distributed throughout the filling. A few swirls of dark crumb are fine; you do not need to mix until it is completely uniform.
6. Chill the Filling (Recommended):
For a firmer filling that holds its shape better and is easier to spoon or pipe onto the donuts, cover the bowl with plastic wrap and place it in the refrigerator for 15 to 20 minutes. This brief chilling period helps the filling set slightly without becoming too stiff.
7. Melt the White Chocolate:
Place the white chocolate chips in a small, microwave-safe bowl. Microwave in 20-second intervals on medium power, stirring well after each interval, until the chocolate is completely melted and smooth. Be careful not to overheat the chocolate, as white chocolate can scorch easily. Alternatively, you can melt it using a double boiler on the stovetop. Set the melted chocolate aside to cool slightly while you assemble the burgers.
8. Assemble the Donut Burgers:
Place the bottom half of a glazed donut, cut side up, on a serving plate. Using a spoon or a piping bag, place a generous dollop (about 3-4 tablespoons) of the chilled Oreo cheesecake filling onto the center of the donut base. Using the back of the spoon, gently spread the filling slightly, leaving a small border around the edge. Carefully place the top half of the donut over the filling, cut side down. Gently press down to create a « burger » shape, but do not squeeze so hard that the filling spills out from the sides.
9. Add the Toppings:
Using a spoon or a small whisk, drizzle the melted white chocolate generously over the top of each assembled donut burger, allowing it to flow down the sides slightly. Immediately place a whole Oreo cookie on top of the wet chocolate as a crown, gently pressing it down so it adheres. Allow the chocolate to set for a few minutes.
10. Serve and Enjoy:
Serve the donut burgers immediately for the best texture, with the soft donut and creamy, cool filling. For a firmer, more set dessert, you can place the assembled and topped donut burgers in the refrigerator for about 15 minutes before serving to allow the filling and chocolate to set further.
