
Ingredients:
– 1 1/2 cups all-purpose flour
– 1 tsp baking powder
– 1/2 tsp salt
– 1/2 cup unsalted butter, softened
– 1 cup granulated sugar
– 2 large eggs
– 1 cup pineapple juice
– 1 cup crushed pineapple
– 1 tsp vanilla extract
– Confectioners’ sugar for dusting (optional)
Instructions:
1. Preheat oven to 350°F (180°C). Grease two 9-inch (23cm) round cake pans.
2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
3. In a large bowl, beat butter and sugar until light and fluffy, about 3 minutes.
4. Beat in eggs one at a time, then stir in pineapple juice and vanilla extract.
5. Gradually mix in the flour mixture until just combined, being careful not to overmix.
6. Fold in crushed pineapple.
7. Divide batter evenly between prepared pans and smooth tops.
8. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
9. Remove from oven and let cool in pans for 10 minutes before transferring to a wire rack to cool completely.
10. Once cakes are completely cool, you can frost and decorate as desired.
11. Dust with confectioners’ sugar before serving, if desired.
