Pineapple Coconut Holiday Balls

Ingredients:

1 can (20 oz) crushed pineapple, well-drained
1 ½ cups graham cracker crumbs
1 cup sweetened condensed milk
1 ½ cups shredded coconut (plus extra for rolling)
1 teaspoon vanilla extract
Holiday-themed sprinkles (optional)

Directions:

Prepare the Mixture:
In a large bowl, mix the drained crushed pineapple, graham cracker crumbs, sweetened condensed milk, shredded coconut, and vanilla extract until well combined.
Chill the Mixture:
Cover the bowl with plastic wrap and refrigerate for about 1–2 hours, or until the mixture is firm enough to roll into balls.
Form the Balls:
Once chilled, take about a tablespoon of the mixture and roll it into a ball using your hands. Repeat with the remaining mixture.
Coat with Coconut:
Roll each pineapple ball in shredded coconut to coat the outside. For an extra festive touch, sprinkle the top with red and green holiday sprinkles.
Chill Before Serving:
Place the coated balls on a tray and refrigerate for at least 30 minutes to set. Serve chilled.
