Ingredients:

8 oz cream cheese, softened

1/2 cup creamy peanut butter

1/4 cup powdered sugar

1/2 cup bittersweet chocolate chips, chopped (milk or semi-sweet chocolate chips can be used for a sweeter taste)

8 oz semi-sweet chocolate, coarsely chopped

Instructions:

Prepare the Cheesecake Mixture:

In a mixing bowl, combine the cream cheese, peanut butter, and powdered sugar. Beat on medium speed for about 2 minutes until smooth and well combined.

Gently fold in the chopped chocolate chips.

Chill the Mixture:

Cover the mixture and refrigerate for 1-2 hours, or until firm enough to handle.

Shape the Truffles:

Line a tray with parchment paper.

Using a small ice cream scoop or spoon, portion the cheesecake mixture into small balls (keep them small, as they are rich and best enjoyed in bite-sized pieces).

Roll the balls between your hands to smooth them out, then place them on the prepared tray.

Freeze the truffles for 20-30 minutes to firm them up.

Melt the Chocolate:

Melt the coarsely chopped semi-sweet chocolate in a heatproof bowl. Let it sit for 5 minutes to cool slightly before dipping.

Coat the Truffles:

Line another tray with parchment paper.

Working in small batches (3-4 truffles at a time), quickly dip each frozen truffle into the melted chocolate using a fork or toothpick, ensuring they are fully coated. Place them on the prepared tray.

Repeat until all truffles are coated.

Add the Finishing Touch:

Once the chocolate shell has hardened, reheat any remaining melted chocolate, transfer it to a zip-top bag, and snip off a small corner. Drizzle the chocolate over the truffles for a decorative touch.

Store:

Keep the truffles refrigerated in an airtight container until ready to serve.
