Ingredients:
8 chicken thighs (skin-on, bone-in)
1 tbsp fresh lemon juice
1 tsp salt
1-2 tsp freshly ground black pepper
2 tsp garlic powder
2 tbsp butter
2 garlic cloves, crushed
2 tsp dried herbs (Any dried herb mix works: Herbs de Provence, Italian seasoning, or even just dried oregano)
1 cup chicken stock
1 lemon, sliced
Instructions:
Season the chicken thighs with lemon juice, salt, garlic powder, and black pepper.
Heat a large skillet or pan over medium-high heat. Place the chicken thighs skin-side down and cook for 7-10 minutes until the skin turns a deep golden brown and the fat has rendered.
Carefully flip the chicken thighs and cook for another 10 minutes on the other side.
Remove the chicken from the pan and set aside.
In the same pan, add butter, crushed garlic, and dried herbs. Cook for 30 seconds, then add the lemon slices and chicken stock. Bring the mixture to a simmer.
Return the chicken thighs to the pan and cook for an additional 10 minutes. For more sauce, cover the pan, or place it in a hot oven to finish cooking.
