For the Chocolate Cupcakes:
1 cup all-purpose flour
½ cup unsweetened cocoa powder
1 tsp baking soda
½ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs

½ cup hot water or hot coffee
For the Peanut Butter Lava Filling:
½ cup creamy peanut butter
¼ cup caramel sauce
¼ cup sweetened condensed milk
For the Peanut Butter Frosting:
½ cup unsalted butter, softened
½ cup creamy peanut butter
2 cups powdered sugar
2 tbsp heavy cream or milk
1 tsp vanilla extract
For Toppings:
Melted chocolate (for drizzling)
Chopped peanuts
Extra caramel sauce
Instructions:
Step 1: Make the Chocolate Cupcakes
Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
In another bowl, beat butter and sugar until creamy. Add eggs one at a time, then mix in vanilla.
Alternate adding the dry ingredients and buttermilk, mixing until just combined. Stir in hot water or coffee.
Fill cupcake liners ¾ full and bake for 18–20 minutes. Let cool.
Step 2: Prepare the Peanut Butter Lava Filling
Mix peanut butter, caramel sauce, and sweetened condensed milk until smooth.
Once cupcakes are cool, use a small knife or piping tip to core out the center of each cupcake.
Fill with the peanut butter caramel mixture.
Step 3: Make the Peanut Butter Frosting
Beat butter and peanut butter together until smooth.
Gradually add powdered sugar, then mix in heavy cream and vanilla until fluffy.
Pipe onto cupcakes.
Step 4: Add Toppings
Drizzle melted chocolate over the frosting.
Sprinkle with chopped peanuts.
Drizzle extra caramel for an extra gooey touch!
