Ingredients:
Steak and Seasoning:
2 lbs steak (filet, ribeye, sirloin, etc.)
4-5 tablespoons avocado oil (higher smoke point)
Homemade Blackened Seasoning:
2 tablespoons smoked paprika
1 tablespoon cayenne pepper
1 tablespoon onion powder
2 teaspoons garlic powder
1 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
Parmesan Cream Sauce:
5 tablespoons butter, divided
10 cloves garlic, minced, divided
1.5 cups heavy cream
2 green onions, diced
1 teaspoon red pepper flakes
2/3 cup grated parmesan cheese
Cheesy Mashed Potatoes:
4 lbs russet potatoes
1 cup half and half, warmed
6 tablespoons salted butter, melted
3/4 cup shredded Monterey Jack cheese (or mozzarella, pepper jack)
1 teaspoon garlic powder
3/4 teaspoon salt
Pepper to taste (about 1/2 teaspoon)
Directions:
Prep the Ingredients:
Cut steak into 2-3″ pieces. Rub evenly with avocado oil then season well on all sides with blackened seasoning. Allow steak to sit for 10-15 minutes at room temp.
Peel potatoes and quarter them. Soak in cold water for 10 minutes to remove excess starch. Drain, then boil in salted water until fork tender.
Cook Steak and Potatoes:
In a large skillet over medium-high heat, add 2-3 tablespoons avocado oil. Add steak pieces and cook undisturbed about 2 minutes per side until golden. Reduce heat, cook for an additional minute. Remove and keep warm.
In the same skillet, add 3 tablespoons butter and half the minced garlic. Saute until fragrant. Toss the steak in the garlic butter, coat well, and cook for another minute. Remove and keep warm under foil.
Make the Cream Sauce & Serve:
In the skillet, add remaining butter and garlic. Saute until fragrant. Gradually whisk in heavy cream and simmer until reduced (3-5 minutes).
Mash the potatoes with butter, half and half, and cheese. Season with garlic powder, salt, and pepper.
Stir red pepper flakes, scallions, and parmesan into the sauce. When thickened, adjust seasoning. Serve steak over mashed potatoes, topped with parmesan cream sauce.
