Ingredients:
1 lb fresh green beans, trimmed
1 lb baby potatoes, halved
6 slices bacon, chopped
1 packet ranch seasoning mix
1/4 cup olive oil
2 cloves garlic, minced
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Step 1: Cook the Bacon
In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
Step 2: Cook the Potatoes
Add the halved baby potatoes to the skillet with the bacon grease. Cook over medium heat, stirring occasionally, until the potatoes are golden brown and tender, about 10-15 minutes.
Step 3: Add the Green Beans
While the potatoes are cooking, bring a pot of water to a boil and blanch the green beans for 3-4 minutes, then drain and rinse with cold water to stop the cooking process. Add the blanched green beans to the skillet with the potatoes.
Step 4: Season and Cook Together
Add the minced garlic to the skillet and cook for 1-2 minutes, until fragrant. Sprinkle the ranch seasoning mix over the green beans and potatoes. Drizzle with olive oil and toss to coat evenly. Cook for an additional 5 minutes, stirring occasionally, until everything is well combined and heated through.
Step 5: Add Bacon and Garnish
Return the cooked bacon to the skillet and toss to combine. Season with salt and black pepper to taste. Garnish with chopped fresh parsley.
Step 6: Serve
