2 medium yellow squash, cut into 1/4-inch rounds

1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
Seasonings & Oil
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Instructions
Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
In a mixing bowl, combine breadcrumbs, Parmesan cheese, oregano, basil, salt, and pepper.
Brush both sides of each squash round with olive oil, then evenly coat with the breadcrumb mixture.
Arrange the coated squash rounds on the baking sheet, ensuring they don’t touch. Sprinkle shredded cheddar cheese evenly over the top.
Bake for 20-25 minutes, or until the cheese is melted, golden, and bubbly.
Allow to cool for a few minutes before serving warm.
Notes
Perfect as an appetizer or side dish.
Zucchini can be used as a substitute for yellow squash.
