Ingredients
1 cup warm milk (110°F / 43°C)
2 ¼ tsp active dry yeast
1 tbsp sugar
3 cups all-purpose flour
1 tsp salt
4 tbsp unsalted butter, melted
1 large egg
2 cups shredded cheese (mozzarella, cheddar, or a blend)
Instructions
Activate the yeast: Mix warm milk, sugar, and yeast in a bowl. Let sit for 5–10 minutes until frothy.
Make the dough: In a large bowl, whisk flour and salt. Create a well in the center and add the yeast mixture, melted butter, and egg. Stir until a dough forms.
Knead: Turn the dough onto a floured surface and knead for 8–10 minutes until smooth and elastic.
First rise: Place the dough in a greased bowl, cover, and let rise in a warm spot for 1 hour or until doubled.
Shape the buns: Punch down the dough and divide into 12 pieces. Flatten each, add a spoonful of cheese, then fold and seal into a bun.
Second rise: Arrange buns on a parchment-lined baking sheet, cover, and let rise for 30 minutes.
Bake: Preheat oven to 375°F (190°C). Brush buns with milk or egg wash for a golden crust. Bake for 15–20 minutes until golden and cheese is bubbly.
Serve: Let cool slightly before enjoying for the best melty texture.
Variations & Tips

Add-ins: Mix herbs (rosemary, thyme) into the dough or spicy additions (jalapeños, chili flakes) into the filling.
