Ingredients
4 fresh or frozen catfish filets (approximately 8 oz. each)
1 tablespoon ground black pepper
1 tablespoon dried oregano, crushed
2 – 3 teaspoon seasoned salt
2 teaspoon onion powder
1 teaspoon crushed red pepper
¾ teaspoon chili powder
½ teaspoon ground cumin
Directions
Thaw fish, if frozen. Rinse fish; pat dry with paper towels.
Preheat oven to 350°F. For Cajun seasoning, stir together black pepper, oregano, seasoned salt, onion powder, crushed red pepper, chili powder, and cumin. Set aside 1 tablespoon of the seasoning. (Store remaining seasoning in an airtight container at room temperature for up to 1 month; use on fish or pork.)
Coat both sides of the fish fillets with the reserved 1 tablespoon seasoning. Arrange fish in a single layer in a greased baking dish.
Bake for 15 to 18 minutes or until fish flakes easily with a fork, turning once halfway through baking.
