Ingredients

1 loaf day-old brioche

150g softened cream cheese

2 tbsp caster sugar

1 tsp vanilla extract

½ cup blueberries (fresh or frozen)

1 egg

½ cup milk

½ cup cream

1 tsp cinnamon

Butter (for frying)

Extra blueberries, icing sugar, and maple syrup (for serving)

Method

Prepare filling: Beat cream cheese, sugar, and vanilla until smooth. Gently fold in blueberries.

Assemble sandwiches: Slice brioche into 8 pieces, spread filling on 4 slices, and top with remaining slices to form sandwiches.

Make custard: Whisk egg, milk, cream, and cinnamon in a shallow dish.

Soak sandwiches: Dip each sandwich into custard for 20 seconds per side.

Cook: Melt butter in a pan over medium heat. Fry sandwiches for 3–4 minutes per side until golden and crisp.
