Ingredients:
* 1 lb ground beef
* ½ small onion (diced)
* 2 cloves garlic (minced)
* 1 tsp cumin
* 1 tsp chili powder
* ½ tsp paprika
* Salt and black pepper to taste
* 1 package empanada dough discs
* Oil for frying
* 1 cup shredded cheese (optional)
For the avocado salsa:
* 2 ripe avocados
* ½ cup cilantro
* 1 jalapeño
* 1 clove garlic
* Juice of 1 lime
* ¼ cup sour cream or Mexican crema
* Salt to taste
Instructions:
1. In a skillet over medium heat, cook ground beef, onion, and garlic until browned.
2. Stir in cumin, chili powder, paprika, salt, and pepper. Let cool slightly.
3. Place filling onto empanada dough discs and top with cheese if desired.
4. Fold dough over filling and seal edges with a fork.
5. Heat oil in a deep skillet and fry empanadas until golden brown and crispy on both sides.
6. Drain on paper towels.
7. For the salsa, blend avocados, cilantro, jalapeño, garlic, lime juice, sour cream, and salt until smooth and creamy.
8. Serve warm empanadas with avocado salsa for dipping.

Brush empanadas with egg wash and bake instead of frying for a lighter crispy version with beautiful golden color!
