Shrimp & Crab Biscuit Melts

Ingredients:

Biscuit Base
01 – 1 package refrigerated flaky biscuits
Seafood Filling
02 – 1 cup cooked shrimp, chopped
03 – 1 cup lump crab meat, canned or fresh
04 – 1 cup shredded mozzarella cheese
05 – 4 oz cream cheese, softened
06 – 1 tablespoon Old Bay seasoning
07 – 2 tablespoons fresh parsley, chopped
Topping
08 – 2 tablespoons melted butter

Steps:

01 – Preheat your oven to 375°F to ensure even baking and a golden, flaky biscuit base.
02 – Flatten each refrigerated flaky biscuit slightly on a baking sheet to create a thinner base for the filling.
03 – In a mixing bowl, combine chopped cooked shrimp, lump crab meat, shredded mozzarella, softened cream cheese, Old Bay seasoning, and chopped fresh parsley. Mix until well combined.
04 – Spoon the filling onto half of the flattened biscuits, then place the remaining biscuits on top. Pinch edges to seal the filling inside.
05 – Brush the tops of the assembled melts with melted butter. Bake in the preheated oven for 13 to 15 minutes until golden brown and puffed.
06 – Allow the melts to rest for about 2 minutes before serving to let the filling settle for easier handling.
Tips:
01 – Ensure shrimp and crab are well-drained to prevent a soggy filling. Experiment with different cheeses or add breadcrumbs for texture. Allow melts to rest post-baking for best shape retention.
