3 medium russet potatoes, peeled & chopped
1 lb ground beef
1 medium white onion, chopped
1 tablespoon olive oil
2 ½ cups sharp cheddar cheese
2 teaspoons minced garlic
1 tablespoon Italian seasoning

How to Make It
Step 1: Prep Potatoes & Cook Beef
Place potato chunks in salted water and boil until just tender (about 8–10 minutes), then drain. Meanwhile, cook the ground beef with chopped onion and minced garlic in a large skillet until the meat is browned. Drain excess fat.
Step 2: Season & Crisp
Add salt, black pepper, and Italian seasoning to the meat mixture. Toss in the boiled potatoes with olive oil and cook over medium-high heat, stirring occasionally, until the potatoes develop a light brown, crispy crust.
Step 3: Add Cheese
Sprinkle the cheddar cheese over the skillet and gently fold it in until melted and stringy.
Step 4: Serve
Garnish with fresh parsley or green onions. Serve immediately while hot and bubbly.
