For the Bars:
1 cup unsalted butter, softened
1 cup creamy peanut butter
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
2 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
For the Frosting:
1/2 cup creamy peanut butter
1/2 cup unsalted butter, softened
4 cups powdered sugar
1/3 cup milk (plus a little more if needed)
2 tsp vanilla extract
Instructions
Step 1: Make the Bars
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or line with parchment paper.
2. In a large mixing bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
3. Beat in eggs and vanilla until smooth.
4. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the wet mixture and mix until combined.
5. Spread dough evenly into the prepared baking dish.
6. Bake for 20–25 minutes, or until edges are golden and center is set. (Do not overbake — they should stay soft.)
7. Let bars cool completely before frosting.
Step 2: Frosting
1. In a large bowl, beat together peanut butter and butter until creamy.
2. Add powdered sugar, milk, and vanilla. Mix until smooth and spreadable (add a splash more milk if too thick).
3. Spread frosting generously over cooled bars.
Step 3: Serve
Cut into squares or bars.
Store in an airtight container at room temp for 2–3 days, or refrigerate for up to a week.
