Instructions
Step 1: Prepare the Dough
In a large bowl, combine warm milk, yeast, and 1 tablespoon of sugar. Let sit for 5–10 minutes until foamy.
Add remaining sugar, eggs, melted butter, and salt. Mix until combined.
Gradually add flour, one cup at a time, mixing with a dough hook or wooden spoon until a soft dough forms.
Knead for about 5–7 minutes (or 4 minutes with a mixer) until smooth and elastic.
Place dough in a greased bowl, cover with a towel, and let rise in a warm spot for 1–1.5 hours, or until doubled in size.
Step 2: Make the Cinnamon Bacon Filling
Cook bacon until crispy, drain excess grease, and chop into small crumbles.
In a small bowl, mix brown sugar and cinnamon.
Keep softened butter ready for spreading.
Step 3: Assemble the Rolls
Punch down the risen dough and roll it out on a floured surface into a 16×12-inch rectangle.
Spread softened butter evenly across the dough.
Sprinkle the cinnamon-sugar mixture generously over the butter.
Evenly scatter crumbled bacon across the surface.
Starting from the long edge, tightly roll the dough into a log.
Cut into 12 equal rolls using a sharp knife or dental floss.
Step 4: Second Rise
Place rolls into a greased 9×13-inch baking dish or round pans.
Cover loosely with a towel and let rise for 30–45 minutes until puffy.
Step 5: Bake the Rolls
Preheat oven to 350°F (175°C).
Bake for 25–30 minutes, until golden brown and the centers are cooked through.
Remove from oven and allow to cool slightly before glazing.
Step 6: Make the Maple Glaze
In a bowl, whisk together powdered sugar, maple syrup, milk, vanilla, and a pinch of salt until smooth.
Adjust thickness by adding more milk for a thinner glaze or more powdered sugar for a thicker one.
Step 7: Glaze and Serve
Drizzle the warm glaze generously over the rolls.
Garnish with extra bacon crumbles and a light maple drizzle if desired.
Serve warm and gooey!
