Banana Bread Cinnamon Rolls

Ingredients

1 cup mashed banana (grab about 2 or 3 medium bananas)
4 cups all-purpose flour
1 teaspoon salt
2 large eggs
1/2 cup melted unsalted butter
1/2 cup granulated sugar
2 1/4 teaspoons active dry yeast
1 cup warm milk

1/2 cup chopped walnuts (toss these in if you like)
2 tablespoons ground cinnamon
1 cup brown sugar
1/2 cup unsalted butter, let it soften

1/2 teaspoon vanilla extract
1 1/2 cups powdered sugar

Instructions

Toss cream cheese, butter, powdered sugar, and vanilla into a bowl. Beat them all together till you get a creamy texture. Smear the icing on the rolls while they’re still warm.

Slide the dish in the oven and bake about 25 to 30 minutes. They should look nicely golden and the tops should be just a tad crisp.

Cover the pan and let the dough puff up for half an hour. While you wait, get your oven set to 350°F (175°C).

Once it’s rolled up tight from the long side, slice the log into a dozen pieces. Drop them into a greased pan, cut side up.

Dust some flour on your counter and roll the dough out into a big rectangle — about 20×14 inches. Slather on your filling, then scatter walnuts over top if you’re feeling it.

Just mix soft butter with cinnamon and brown sugar in a bowl. That’s it. Stir till it’s spreadable.

Take the dough and throw it into a greased bowl. Put a cover on and keep it somewhere warm for about an hour, letting it grow to twice the size.

Little by little, add flour while stirring so dough clumps up nicely. Move it to a floured spot and knead by hand for around 10 minutes.

Toss mashed bananas, salt, eggs, and melted butter into the yeast mix. Give everything a really good stir.

Pour warm milk, yeast, and sugar together in a big bowl. Let it chill for about five minutes — it should get foamy on top.
