
Ingredients:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1/2 cup mashed ripe bananas (about 1 large banana)
1 cup old-fashioned rolled oats
1/2 cup chopped walnuts (optional)
1/2 cup chocolate chips (optional)
Directions:
Preheat your oven to 350°F (175°C) and get a baking sheet ready with some parchment paper. In a medium bowl, mix the flour, baking soda, cinnamon, and salt. Put this bowl aside for a moment. In a larger bowl, beat the softened butter with both sugars until they’re nice and fluffy. Crack in the egg, pour in the vanilla extract, and then stir in the mashed banana. Combine everything well. Now, gradually add the dry mix you set aside earlier to this wet mixture. Stir until it’s just combined. Next, fold in those oats, and if you’re up for it, the walnuts and chocolate chips. Scoop tablespoon-sized mounds of dough onto your prepared baking sheet, making sure to space them about 2 inches apart. Bake these beauties for about 10-12 minutes until the edges get a light golden hue. After taking them out of the oven, allow them to cool on the baking sheet for a few minutes and then transfer to a wire rack to finish cooling completely.
