Ingredients
2 c flour
1 tsp baking soda
1/2 tsp salt
1 1/2 c sugar
1/4 c vegetable oil
2 eggs
2 tsp vanilla
4 ripe bananas – smashed
1 c buttermilk
1/2 c chopped nuts – optional – i used pecans
FROSTING
1 – 8 oz cream cheese, softened
1 c confectioners’ sugar
pinch salt
1 1/2 tsp vanilla extract
1 1/2 c heavy cream
Directions
1. Preheat oven to 375 degrees F. Lightly grease a 9 x 13 baking pan; set aside.
2. Mash bananas with a fork.
3. In a bowl, whisk together the flour, baking soda and salt. Set aside.
4. In a large mixing bowl, beat the sugar and oil together on medium speed until combined.
5. Add the eggs and beat till combined.
6. Now, beat in the vanilla and mashed bananas.
7. Reduce mixer speed to low. In three additions, add flour mixture, followed by buttermilk, ending with flour. Stir in nuts now, if using. Before pouring batter into prepared pan, give the batter one last good stir with spatula.
Luscious Banana Cake W / Cream Cheese Frosting
8. Pour into the prepared pan.
9. Bake for 25 – 30 minutes until golden brown and pick comes out dry. Do not over bake. Mine only took 22 minutes. Place on wire rack to cool.
10. Frosting: In a large bowl combine cream cheese, sugar, salt and vanilla. Beat until fluffy.
11. In another bowl, beat heavy cream until stiff peaks form.
12. Fold whipped cream into cream cheese mixture.
13. Frost cake. I sprinkled the top with some fresh nutmeg. You could also use your favorite cream cheese frosting, if not wanting to use the whipping cream – cream cheese recipe.
