Golden Honey-Cranberry Chicken with Creamy Ricotta and Festive Herbs

Juicy, golden-seared chicken glazed with honey and tart cranberries, set on a cloud of lemony ricotta. It’s holiday-worthy but ready in about 40 minutes.

If I had to pick one dish to bring to the table this season, this might be it. The chicken gets a deep golden crust, the honey-cranberry glaze is sweet and tangy, and the ricotta underneath is cool, creamy, and a little bright from lemon. A scatter of fresh herbs on top makes it look like you fussed far more than you did.

It’s also a true one-skillet glaze. Dinner party, Thanksgiving-week weeknight, or a cozy Sunday supper: it works for all of them.

Prep: 15 minutes | Cook: 25 minutes | Total: 40 minutes | Serves: 4

Ingredients

For the chicken

4 bone-in, skin-on chicken thighs (or 4 boneless breasts, pounded to even thickness)
1 tsp kosher salt
½ tsp black pepper
½ tsp garlic powder
1 tbsp olive oil

For the honey-cranberry glaze

1 cup fresh or frozen cranberries
⅓ cup honey
¼ cup chicken broth
2 tbsp apple cider vinegar
2 cloves garlic, minced
1 tsp fresh thyme leaves
1 tbsp butter

For the creamy ricotta

1 cup whole-milk ricotta
1 tbsp olive oil
Zest of 1 lemon, plus 1 tsp juice
Pinch of salt

To finish

Fresh thyme, chopped parsley, and a few rosemary leaves
A few extra cranberries and flaky sea salt (optional)

Instructions

Season the chicken. Pat the chicken dry and season on all sides with salt, pepper, and garlic powder. Dry skin is what gives you that crispy, golden finish.
Sear. Heat the olive oil in a large oven-safe skillet over medium-high heat. Place the chicken skin-side down and sear 5 to 6 minutes, until deeply golden. Flip and cook 2 minutes more.
Make the glaze. Remove the chicken to a plate. Pour off all but 1 tablespoon of fat. Add the garlic and cook for 30 seconds, then add the cranberries, honey, broth, vinegar, and thyme. Simmer 5 minutes, until the berries start to burst.
Finish in the oven. Nestle the chicken back into the sauce and transfer to a 400°F oven. Bake 15 to 20 minutes for thighs (12 to 15 for breasts), until the internal temperature reaches 165°F.
Whip the ricotta. While the chicken bakes, stir together the ricotta, olive oil, lemon zest, lemon juice, and salt until smooth and creamy.
Glaze and serve. Remove the skillet from the oven, swirl in the butter, and spoon the sauce over the chicken. Spread the ricotta on a platter or plates, top with the chicken, and finish with fresh herbs, a few cranberries, and flaky salt.
Tips and Variations
Thickening the glaze: If it’s too thin, set the skillet back on the stove and simmer 2 to 3 minutes.
Don’t have fresh cranberries? Frozen work perfectly, no thawing needed. Dried cranberries also work; use ½ cup and add an extra splash of broth.
Make it spicy: Add a pinch of red pepper flakes to the glaze for a sweet-heat kick.
Swap the cheese: Whipped goat cheese or mascarpone are delicious in place of ricotta.
Make ahead: The ricotta can be mixed up to 2 days ahead and kept covered in the fridge.
What to Serve With It

Roasted garlic mashed potatoes, buttery green beans, or a crisp arugula salad all pair beautifully. Crusty bread is also great for soaking up the extra glaze.

Storing and Reheating

Refrigerate leftover chicken and sauce in an airtight container for up to 4 days. Reheat gently in a 325°F oven or a skillet over medium-low heat. Keep the ricotta separate and serve it cold or at room temperature.
