Ingredients:
°1 ripe banana (120 g)
°300 g frozen pineapple chunks (store-bought or homemade frozen)
°125g coconut cream
°1 juicy lemon
°30 to 50 g icing sugar
Preparation
The day before, cut the banana into slices and enclose them in a plastic bag.
Place the bag in the freezer for at least 12 hours.
In the bowl of the Thermomix if possible, previously placed in the freezer for 15 minutes so that it is very cold, combine the banana slices, the pineapple pieces, the coconut cream, the lemon juice and the icing sugar (quantity to adapt according to the sugar level of the fruit).
Turbo boost 3 times, then blend for 20 seconds, speed 6.
Scrape down the sides of the bowl and continue mixing for 15 seconds, speed 4. You get a very smooth ice cream.
Transfer the ice cream to a suitable container and place it in the freezer for at least 30 minutes before tasting.
