Ingredients

  • 2 tablespoons unsalted butter
  • 4 cloves garlic minced
  • 3 tablespoons all-purpose flour
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon salt
  • ¼ teaspoon dried oregano
  • 1 cup whole milk
  • ½ cup grated Parmesan cheese

Method

  1. Melt the Butter – In a small saucepan over medium heat, melt the butter completely.
  2. Sauté the Garlic – Add minced garlic and cook for 30 seconds until fragrant (avoid browning).
  3. Make the Roux – Whisk in flour, pepper, salt, and oregano, forming a smooth paste. Cook for 1–2 minutes to remove the raw flour taste.
  4. Add Milk Gradually – Slowly pour in milk while whisking continuously until the sauce thickens.
  5. Incorporate Cheese – Remove from heat and stir in Parmesan until fully melted and creamy.
  6. Serve or Store – Use immediately (great for pizza or pasta) or refrigerate in an airtight container.
  7. Notes & Variations:
  8. Too Thick? Thin with a splash of milk.
  9. Spicy Version – Add red pepper flakes with the garlic.
  10. Vegan Option – Substitute butter with plant-based butter, milk with plant milk, and Parmesan with nutritional yeast.
  11. Smooth Sauce Tip – Whisk constantly to prevent lumps.
