The Ultimate Mac ‘N’ Cheese-Stuffed Meatloaf

Ingredients
  

  • Meatloaf Ingredients:
  • 2 lbs ground beef or a beef-pork blend
  • 1 cup breadcrumbs
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 2 large eggs
  • ½ cup milk
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • Mac & Cheese Filling:
  • 1 cup elbow macaroni
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • ¾ cup milk
  • 1 ½ cups shredded sharp cheddar
  • Salt & pepper to taste
  • Glaze Topping:
  • ¼ cup ketchup
  • 1 tbsp brown sugar
  • 1 tsp mustard optional

Method
 

  1. Prepare the Mac & Cheese:
  2. Cook macaroni in salted water until al dente; drain.
  3. Melt butter in a saucepan, whisk in flour, and cook 1 minute.
  4. Gradually add milk, stirring until slightly thickened.
  5. Mix in cheese until melted, season, then fold in pasta. Set aside.
  6. Make the Meatloaf Base:
  7. In a large bowl, combine all meatloaf ingredients. Mix gently—avoid overworking.
  8. Assemble:
  9. Preheat oven to 375°F (190°C). Line a baking sheet.
  10. Flatten ⅔ of the meat mixture into a rectangle (~1" thick).
  11. Spoon mac & cheese into the center, leaving edges bare.
  12. Top with remaining meat, sealing completely. Shape into a loaf.
  13. Glaze & Bake:
  14. Mix ketchup, brown sugar, and mustard; spread over the loaf.
  15. Bake 50–60 minutes (internal temp: 160°F/71°C).
  16. Rest 10–15 minutes before slicing.
