- Prep & Preheat
- Preheat oven to 350°F (175°C). Grease an 8x8-inch baking dish with non-stick spray.
- Make the Cheesecake Filling
- In a bowl, beat cream cheese, egg, and vanilla until smooth.
- Optional: Mix in 1-2 tbsp powdered sugar for added sweetness.
- Layer the Crust
- Cut cookie dough in half. Press one half evenly into the baking dish to form the base.
- Assemble the Layers
- Pour cheesecake filling over the crust, spreading smoothly.
- Break the remaining cookie dough into small pieces and scatter over the top (they’ll melt into a golden crust as they bake).
- Bake & Cool
- Bake for 30 minutes, or until the top is golden.
- Let cool in the pan for 1 hour (this helps the cheesecake set!).
- Garnish & Serve
- Top with sprinkles (if using), then cut into 9 squares.
