1️⃣ Prep Work
Let butter and eggs come to room temperature.
Blend freeze-dried strawberries into a fine powder. Mix 1 tbsp with sparkling sugar for coating; set aside.
2️⃣ Make the Dough
Preheat oven to 350°F (175°C). Line baking sheets with parchment.
Cream butter and sugar until fluffy (~3 mins). Beat in eggs, extracts, and food coloring.
In another bowl, whisk dry ingredients (flour, cornstarch, baking powder/soda, cream of tartar, salt, and remaining strawberry powder).
Gradually mix dry ingredients into wet until combined.
3️⃣ Chill & Shape
Chill dough for 2+ hours (crucial for texture!).
Roll into 1.5-inch balls, coat in sparkling strawberry sugar, and place 2 inches apart on sheets.
4️⃣ Bake & Cool
Bake 10–12 mins until edges set (centers will look soft).
Let cool 5 mins on sheets, then transfer to a rack.
