Strawberry Mango Margarita Cupcakes

Ingredients
  

  • Cupcake Batter
  • 3 ½ cups all-purpose flour
  • 1 ¼ cups caster sugar
  • 3 tsp baking powder
  • ½ tsp fine salt
  • ½ cup unsalted butter softened
  • 2 large eggs
  • 1 ½ cups full-cream milk
  • ½ cup vegetable oil
  • 2 tbsp Greek yogurt or sour cream
  • 1 tsp vanilla extract
  • For Strawberry Batter:
  • Pink/red food gel
  • 1 tsp strawberry flavoring
  • For Mango Batter:
  • Yellow food gel
  • 1 tsp mango flavoring
  • 2 tsp tequila optional
  • Frosting & Decoration
  • 1 batch American or Swiss meringue buttercream
  • For Strawberry Frosting:
  • Pink/red food gel
  • Strawberry flavoring
  • For Mango Frosting:
  • Yellow food gel
  • Mango flavoring
  • 1 cup granulated sugar for rim effect
  • 10 limes cut into 40 wedges
  • 10 strawberries halved

Method
 

  1. Prep & Preheat:
  2. Preheat oven to 275°F (140°C) for fan-forced or 320°F (160°C) for conventional.
  3. Line two cupcake tins with liners.
  4. Make the Batter:
  5. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  6. Add softened butter and mix until the texture resembles coarse crumbs.
  7. In a separate bowl, whisk eggs, milk, oil, yogurt, vanilla, and tequila (if using).
  8. Gradually mix the wet ingredients into the dry until just combined.
  9. Flavor & Color:
  10. Divide the batter into two portions.
  11. Mix pink/red gel + strawberry flavoring into one half.
  12. Mix yellow gel + mango flavoring into the other half.
  13. Layer & Bake:
  14. Pipe alternating layers of strawberry and mango batter into the liners.
  15. Bake for 40–50 minutes, or until a toothpick comes out clean.
  16. Cool completely on a wire rack.
  17. Prepare the Frosting:
  18. Divide the buttercream in two.
  19. Color/flavor one half strawberry (pink/red), the other mango (yellow).
  20. Decorate:
  21. Lightly dip cupcake tops in water, then roll in sugar for a "margarita rim" effect.
  22. Pipe swirls of both frostings on each cupcake.
  23. Garnish with a lime wedge and strawberry half.

Notes

The sugar rim mimics a margarita glass—fun and festive!
For an adult twist, add tequila to both batter and frosting.
