Method
- Prep & Preheat:
- Preheat oven to 275°F (140°C) for fan-forced or 320°F (160°C) for conventional.
- Line two cupcake tins with liners.
- Make the Batter:
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Add softened butter and mix until the texture resembles coarse crumbs.
- In a separate bowl, whisk eggs, milk, oil, yogurt, vanilla, and tequila (if using).
- Gradually mix the wet ingredients into the dry until just combined.
- Flavor & Color:
- Divide the batter into two portions.
- Mix pink/red gel + strawberry flavoring into one half.
- Mix yellow gel + mango flavoring into the other half.
- Layer & Bake:
- Pipe alternating layers of strawberry and mango batter into the liners.
- Bake for 40–50 minutes, or until a toothpick comes out clean.
- Cool completely on a wire rack.
- Prepare the Frosting:
- Divide the buttercream in two.
- Color/flavor one half strawberry (pink/red), the other mango (yellow).
- Decorate:
- Lightly dip cupcake tops in water, then roll in sugar for a "margarita rim" effect.
- Pipe swirls of both frostings on each cupcake.
- Garnish with a lime wedge and strawberry half.
Notes
The sugar rim mimics a margarita glass—fun and festive!
For an adult twist, add tequila to both batter and frosting.
