Ingredients
  

  • For the Rolls:
  • 6 –8 thick slices of bread brioche or Texas toast recommended
  • 2 large eggs
  • ½ cup milk whole milk or half-and-half for extra richness
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • A pinch of salt
  • For the Filling:
  • 4 mini peanut butter cups or 2 regular, chopped
  • 2 tbsp creamy peanut butter
  • Optional: 1 tbsp honey or maple syrup for added sweetness
  • For Cooking:
  • 2 tbsp unsalted butter melted (plus extra for greasing)
  • Powdered sugar for dusting
  • For the Chocolate Drizzle:
  • ½ cup semi-sweet chocolate chips
  • 2 tbsp heavy cream or milk for a thinner consistency

Method
 

  1. Step 1: Prep the Egg Mixture
  2. In a shallow bowl, whisk together eggs, milk, vanilla, cinnamon, and salt until smooth. Set aside.
  3. Step 2: Assemble the Rolls
  4. Lay out bread slices on a flat surface.
  5. Spread about 1 tbsp peanut butter on each slice, leaving a small border.
  6. Sprinkle chopped peanut butter cups evenly over the peanut butter.
  7. Roll each slice tightly into a log, pressing gently to seal.
  8. Step 3: Coat in Egg Mixture
  9. Dip each roll into the egg mixture, ensuring full but not excessive coverage. Let excess drip off.
  10. Step 4: Cook to Golden Perfection
  11. Heat a nonstick skillet over medium heat with 1 tbsp melted butter.
  12. Place rolls seam-side down, leaving space between them.
  13. Cook 2–3 minutes per side until golden and crispy, adding more butter as needed.
  14. Step 5: Make the Chocolate Drizzle
  15. Microwave chocolate chips and heavy cream in 30-second bursts, stirring until smooth.
  16. Let cool slightly to thicken but remain pourable.
  17. Step 6: Serve & Enjoy!
  18. Transfer rolls to a plate, dust with powdered sugar, and drizzle with chocolate.
  19. Serve warm with maple syrup, whipped cream, or fresh berries if desired.
