Loaded Cheddar Ranch Beef and Sweet Corn Rotini Bake

Ingredients
  

  • 1 lb ground beef
  • 2 cups rotini pasta cooked & drained
  • 1 cup sweet corn kernels fresh, frozen, or canned
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese + extra for topping
  • ½ cup cream cheese softened
  • ½ cup sour cream
  • 1 cup milk
  • 1 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Brown the Beef:
  • Heat olive oil in a large skillet over medium heat.
  • Add ground beef, breaking it apart as it cooks until browned. Drain excess fat.
  • Season with garlic powder, onion powder, salt, pepper, and ranch seasoning. Set aside.
  • Make the Cheese Sauce:
  • In a saucepan, combine cream cheese, sour cream, and milk over medium heat.
  • Stir until smooth and melted, then add cheddar cheese until fully incorporated.
  • Season lightly with salt & pepper to taste.
  • Combine Everything:
  • Preheat oven to 375°F (190°C).
  • In a large bowl, mix the cooked pasta, beef, corn, and cheese sauce until evenly coated.
  • Bake:
  • Transfer to a greased 9x13-inch baking dish.
  • Sprinkle extra cheddar cheese on top.
  • Bake for 20–25 minutes until bubbly and golden.
  • Serve:
  • Garnish with fresh parsley and enjoy hot!

Notes

Add Veggies: Stir in bell peppers, green onions, or spinach.
Spice It Up: Mix in jalapeños or hot sauce for heat.
Storage: Keeps in the fridge for 3 days—reheat in the oven or microwave.
