- Preheat oven to 375°F (190°C). Lightly grease a muffin tin.
- Mix ground chicken, Parmesan, and breadcrumbs in a bowl. Add garlic, egg, milk, parsley, oregano, onion powder, salt, and pepper. Stir until just combined (avoid overmixing).
- Divide mixture evenly into the muffin tin, pressing gently to shape.
- Bake for 20–25 minutes, or until golden and cooked through.
- Top each meatloaf with marinara sauce and mozzarella. Return to the oven for 5 minutes, or until cheese melts.
- Serve warm and enjoy!
