Ingredients
  

  • 1 package English muffins
  • 8 eggs
  • 1 lb breakfast sausage
  • 8 oz mild cheddar cheese thinly sliced
  • 2 cups milk for sawmill gravy
  • ¼ cup sausage drippings add butter if needed
  • ¼ cup flour for sawmill gravy
  • ½ tsp salt or to taste, for gravy
  • ¼ tsp black pepper or to taste, for gravy

Method
 

  1. Cook the Sausage & Make the Gravy
  2. In a cast-iron skillet, cook sausage over medium heat until browned and fully cooked. Remove sausage, leaving ¼ cup drippings in the pan (add butter if needed).
  3. Make the roux: Sprinkle flour into the drippings and cook, stirring constantly, for 5–10 minutes until golden.
  4. Whisk in milk gradually, stirring until the gravy thickens and comes to a gentle boil. Season with salt & pepper.
  5. Prepare the Eggs & Toast Muffins
  6. Scramble the eggs in a non-stick skillet (add a splash of milk for fluffier eggs, if desired).
  7. Lightly toast English muffins while the gravy simmers.
  8. Assemble & Broil
  9. Preheat the broiler on high.
  10. Assemble pizzas: On a baking sheet, layer each toasted muffin half with:
  11. Sawmill gravy
  12. Scrambled eggs
  13. Cooked sausage
  14. A slice of cheddar cheese
  15. Broil for 2–3 minutes until cheese is bubbly and melted.
