Cook the Sausage & Make the Gravy
In a cast-iron skillet, cook sausage over medium heat until browned and fully cooked. Remove sausage, leaving ¼ cup drippings in the pan (add butter if needed).
Make the roux: Sprinkle flour into the drippings and cook, stirring constantly, for 5–10 minutes until golden.
Whisk in milk gradually, stirring until the gravy thickens and comes to a gentle boil. Season with salt & pepper.
Prepare the Eggs & Toast Muffins
Scramble the eggs in a non-stick skillet (add a splash of milk for fluffier eggs, if desired).
Lightly toast English muffins while the gravy simmers.
Assemble & Broil
Preheat the broiler on high.
Assemble pizzas: On a baking sheet, layer each toasted muffin half with:
Sawmill gravy
Scrambled eggs
Cooked sausage
A slice of cheddar cheese
Broil for 2–3 minutes until cheese is bubbly and melted.
