Prepare Mashed Potatoes:
Boil the potatoes in salted water until tender (about 15 minutes). Drain, then mash with warm milk and butter until smooth. Season with salt and set aside.
Cook the Shrimp:
Toss shrimp with olive oil, paprika, garlic powder, salt, and pepper. Heat a skillet over medium-high heat and cook shrimp for 2–3 minutes per side until pink and opaque. Remove and set aside.
Make the Creamy Garlic Sauce:
In the same skillet, melt butter. Add minced garlic and sauté for 1 minute. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan and Dijon mustard. Season with salt and pepper. Let simmer for 3–5 minutes until slightly thickened.
Assemble & Serve:
Spoon mashed potatoes onto plates, top with cooked shrimp, and drizzle generously with the creamy garlic sauce. Garnish with fresh thyme leaves.
