Cook the Beef:
Brown the ground beef in a skillet over medium heat, draining any excess fat.
Mix in the taco seasoning and water, then simmer for 5 minutes until the sauce thickens.

Cut open the baked potatoes and fluff the insides lightly with a fork.
Top with the taco-seasoned beef, followed by cheese, sour cream, green onions, and diced tomatoes.
