Cheesy Taco Potatoes

Ingredients
  

  • 1 lb lean ground beef
  • 4 –6 medium Russet potatoes
  • 1 oz packet taco seasoning
  • ½ cup water
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • ¼ cup chopped green onions
  • ½ cup diced tomatoes

Method
 

  1. Prepare the Potatoes:
  2. Rinse and scrub the potatoes, then prick them with a fork.
  3. Bake at 400°F (200°C) for 45–50 minutes or until easily pierced with a fork.
  4. Cook the Beef:
  5. Brown the ground beef in a skillet over medium heat, draining any excess fat.
  6. Mix in the taco seasoning and water, then simmer for 5 minutes until the sauce thickens.
  7. Assemble the Dish:
  8. Cut open the baked potatoes and fluff the insides lightly with a fork.
  9. Top with the taco-seasoned beef, followed by cheese, sour cream, green onions, and diced tomatoes.
  10. Serve immediately while hot.
