Banana Bread Cake with Cream Cheese Frosting

Ingredients
  

  • For the Banana Cake:
  • 2 cups all-purpose flour
  • 1 ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground cinnamon optional
  • ½ cup unsalted butter softened
  • 1 ½ cups granulated sugar
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 3 –4 ripe bananas mashed (about 1 ½ cups)
  • ½ cup buttermilk room temperature
  • For the Cream Cheese Frosting:
  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 4 cups powdered sugar sifted
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

  • Prep & Preheat:
  • Preheat oven to 350°F (175°C).
  • Grease and flour two 8-inch round cake pans or line with parchment paper.
  • Make the Cake Batter:
  • Dry Mix: Whisk together flour, baking soda, baking powder, salt, and cinnamon in a bowl.
  • Cream Butter & Sugar: In a large bowl, beat butter and sugar until light and fluffy.
  • Add Wet Ingredients: Mix in eggs one at a time, then vanilla and mashed bananas.
  • Combine: Alternate adding the dry mix and buttermilk (start and end with dry ingredients). Mix just until combined—don’t overmix!
  • Bake & Cool:
  • Divide batter evenly between pans and smooth tops.
  • Bake for 25–30 minutes, or until a toothpick comes out clean.
  • Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Make the Frosting:
  • Beat cream cheese and butter until smooth.
  • Gradually add powdered sugar, then vanilla and salt. Whip for 2–3 minutes until fluffy.
  • Assemble & Decorate:
  • Frost cooled cake layers, stacking evenly.
  • Optional: Garnish with sliced bananas, chopped nuts, or a cinnamon sprinkle.
